Best Side At Thanksgiving

Creamy Mashed Potatoes

Every year for Thanksgiving my family prepares dishes to bring to a big family gathering, originally each family would bring a dish and we would all meet at one person’s house, because of COVID we’re doing things a little differently this year. Each family is going to be at their own house and we’re all going to call on zoom or make a google meet, in addition to this, within each family everyone has to make or bring something to the dinner. Me being a teenager who doesn’t have much experience cooking decided to make the best side dish at Thanksgiving, mashed potatoes. Here’s how you make it.

Ingredients

  • 3lbs of potatoes, peeled and cut into cubes
  • kosher salt
  • 8 oz. soft cream cheese
  • 4 tbsp. butter
  • 1/2 cup of milk
  • black pepper
  • Freshly chopped chives

Instructions

  1. In a large pot boil potatoes for 17 minutes or until soft. After potatoes are cooked, drain the pot and add the 8 oz. of cream cheese, and mash potatoes together.
  2. After, melt the butter with the milk over medium-high heat. Once the butter and milk are melted together, mix them into the mashed potatoes until completely combined. Once combined season with salt and pepper.
  3. Finally, transfer the mashed potatoes to a serving bowl and top with a little more salt, and add the freshly chopped chives on top.
